Menu Exchange
Jeanette has had a great idea and I am going to participate!
So, for diber, here are five menu ideas that should be quick:
1. Salad with chicken strips. This is a favorite here because it fulfills our veggie requirement and all you have to cook is the chicken. We usually do chicken breasts or tenderloins that we slice into strips after the cooking is complete.
2. Chicken tacos. Cook the chicken and cut into strips or cubes. Place chicken back in pan. Add one can of corn, one can of drained black beans, one cup rice (cooked), and taco seasoning. Maybe add some water to help move the seasoning. Pile into a tortilla with cheese, sour cream, lettuce, and anything else (tomatoes, olives). Ready in 20 minutes or however long it takes to cook the rice. Or premake the rice and just add it and get it warm. (I have just been informed we are having this tonight. I am making tortillas!)
3. Spicy Chicken Stir-Fry with Peanuts. Again, a family favorite. However, I do not deep-fry the chicken in oil. I just cook the chicken after it has been marinated. I cook it in a covered skillet until it is mostly cooked through. Then I take out the chicken and start the step that says "To Stir Fry" with two tablespoons of seasame oil and go from there. Serve over rice with a side of peas or broccoli. Yum. (I once did follow the directions completely and it was too oily. Yuck.) This whole process takes me about 30 minutes. If the rice is pre-cooked, it doesn't take that long.
4. Honey-mustard Turkey Bacon Chicken Sandwiches. Cook one chicken tenderloin per sandwich. Butterfly the chicken tenderloin. Take honey and mustard, mix together. Slather on a hamburger bun. Build a sandwich with lettuce, turkey bacon, provolone cheese, tomato, and of course, the chicken. D like chips with his.
5. Frozen Pizza. It would not be a week's menu if pizza wasn't on it. D loves pizza and sometimes you just have to throw something in the oven. D likes to build up pepperoni pizzas with bell peppers and mushrooms, plus extra cheese.
Ok, there are my five really quick menu ideas. And yes, I realize they are a little heavy on the chicken, but we eat a lot of that around here.
